Not Scirocco content YET, but I'd like to figure it out so I can eventually adapt it to my little project. Anyway...
I would like a device that can REMOTELY control voltage output of something. See the following diagram for what I mean:

I'm not sure even what to search for to do research. Any ideas?

I'll take a stab at this (feelin' a bit froggy)
I'll assume you're looking variable output from 0-12V. You could use a 12V variable regulator circuit to achieve this, but most use a potentiometer for controlling voltage. You could rig a servo to rotate the potentiometer using RC gear. There might be a fully-digital regulator circuit designs, also. Kinda curious...how REMOTE are we talkin'? Across the car...across the parking lot...across town?

It's also very important to know what the amperage will be. A potentiometer will only take you so far in your quest.
Rheostat is what you'll want for say, over an amp or two @ 12VDC.
For it to be remotely controlled you would use the source power and a relay, so you wouldn't draw it from the RC receiver and burn it up.
Ad what MK1Dantevag said...they have digital regulator circuit designs but generally those are for smaller scale operations.

The simplest solution would be a cheap RC car with forward and backward capability + DC motor. Hook up the source power to the rheostat (or potentiometer depending on the application). Mechanically operate the rheostat with the DC motor (the DC motor is operated by the RC receiver) and thats as straightforward as you can get.

sounds good, but let me give you a better understanding of what I want to do. I'll do it with an example: the rev limiter settings on a J&S Safeguard unit are adjustable with a knob. The knob simply alters the voltage the unit is seeing, with each volt being 1000 rpm (so 6.5V = 6500 redline). I would like to be able to control this voltage remotely (and electrically, not mechanically) as the unit is buried under my dash and adjusting voltage is a pain.
I've got other ideas in mind for similar applications as well.

Well altering the voltage using a potentiometer (which I'm sure is what you're using) doesn't just alter the voltage, it alters the amperage too. But for this application thats beside the point.
This means it's going to be easy to contol. Why even bother with IR/RC adjustment controller boxes? Just wire an external potentiometer to the J&S safeguard box and run some wires up to your dash or some place easily accessible.

Do you know how to work a multimeter? Get the OHM range of the potentiometer currently in the box...go out and buy one at radio shack with the same range, and solder it to the board.
Why make it more complicated than it needs to be? Only Germans and OCD people make things more complicated than they need to be.
