When I'm accelerating I hear the noise on the left side only, almost like it is behind the dash. Sounds like an exhaust leak, but only on acceleration, not when I rev the engine. Any ideas?

Nice....but this is more of an out of the ordinary type noise.....I thought it was an exhaust leak but it doesn't happen when I rev the engine, only on acceleration....

Does it sound like a tin can with metal ball bearings shaking? or more precisely, does it sound like an old 2 stroke scooter?
It's your catalytic converter. There were known manufacturing defects from 1999 to 2001, and basically the insides of your cat have fallen apart and are rattling around.
Seeing as how the cat is probably the single most expensive part on your car other than the whole engine, most VW dealers don't like to replace it, even though there was an EPA mandated recall in the US. It took me going to three dealers with the recall in hand, and calls to VW headquarters for over 2 months before they'd agree to replace it under the recall.
Now my jetta is as quiet as the day it was new.
 
sorry I'm not buyin that. I also have a unusual sound like somethings winding up in the dash. but, when you roll down the window its gone. Window back up it's there again. Sound kinda like a bad speedo cable. But, I haven't had a chance to look.

Guys, you sound like the first two VW dealers I took my car to. They found every excuse in the book to claim it wasnt my catalytic converter.
Finally when I dug up the EPA recall, and had them lift the car up in the air and rev the engine, then they couldn't deny that the noise was coming from the cat.
They swapped it out with a new one (without the known defect of 1999-2001) and the new one made the noise all go away.
But hey- dont believe me. Just ignore the single largest source of noise that comes from the front leftish part of your chassis, which is known to be a defective cat.

It was called a warranty extension, instead of an outright recall. That means that volkswagen only legally has to replace the cats of people who complain.
Considering the cat costs about 800 dollars (it has a half ounce of plantinum in it) Volkswagen could have been ****ed if they had to replace every single cat in all their cars (344,741 of them) from 1999-2001. It would have cost them nearly 300 million dollars.

Remember, your local dealer has probably been told by VW to try and deny as many warranty claims about this issue as possible. It took me MONTHS of harassing them until finally they broke down and replaced it free of charge. They gave me every excuse in the book- they told me my exhaust was rusted or that i needed new spark plugs or that my engine was just getting old (41k miles).. I really had to bug the hell out of them before they'd replace it.
From what I've read, this is what most people experience. Sorry, but at least in my area, the VW dealers were not very cooperative.

I had a rattling under my car and sounded like it was in or around the engine. Kinda around the same place you mentioned. Turned out the oil pan cover broke off at one of the bolts. After it broke it was in the right spot to make noise from the vibrations from the engine. Dealer wanted $150 to fix.
I fixed it by removing the bolt and applying JB Weld. Thank god for that stuff. 10,000 miles later. Still holding like a champ.
If not what I mentioned above, it probably is the CAT. Had the same problem of noise from bad CAT in both my VW Jetta and Jeep Wrangler.

How much would half ounce of platinum cost? Man, I wish I would have kept my old CAT. I could have torn that thing down and melted the platinum. Can you do that? Can you sell it? If so, I'm heading to the junk yard for old VW Cats..

platinum is currently about 1100 dollar per ounce.
however, extracting the platinum in a CAT is not a simple process and usually needs to be done on an industrial scale.. as in you need several hundred cats and their guts before you really want to do it.
also- as you probably know you're not likely to find any cats in junkyards. many junkyard owners have contracts with companies who extract the platinum.
