in the search area of the forum there is a good write up about just switching the seat bases if i didnt have recaros i would put MKIII sport seats in my car http://****************.com/smile/emthup.gif

If I remember, you can bolt the Mk3 seat backs onto the existing Mk2 seat bases. Doing this will allow the seats to slide into the car in the same way they did. If you use the Mk3 lower padding on the Mk2 base and cushion, you should be able to have a seat that looks like the Mk3 seat but bolts into the Mk2.
