What would be some easy/basic upgrades I could do to my stock 2.5 to boost performance? I don't have a huge budget either, but anything suggested would be helpful!

A good tune up, maintenance is the first step. Fresh plugs, a clean air filter, coolant, fuel filter, etc. Basically just making sure stuff is up to snuff before starting with the other stuff.
thats a good engine coupled with a manual and we service and drive a lot of different cars. drop a k&n or good cai on it. 40k service is plugs use ngk and always use approved oil (lubro-moly 5w40 is what we use)
Quickest / most cost effective power upgrade is a cold air intake and a chip tune. That gives a decent bump in power and torque, gets rid of the annoying rev hang, and so forth.
