Replaced transmission and now pedal just stays on floor , never opened the slave or bleeder. Do I need to manually bleed the pedal/ reservoir?

Don't think the MK4 GTI is HydroAssist

Pretty sure the Clutch on a MK4 is not hydro-assisted.

Either way I'd check the mechanical connections first.

It is a hydraulic system tied in directly to the brake fluid reservoir, the brakes use vacuum assisted brake booster. Only mechanical connections are at the pedal (adjustable rod/piston) to the master cylinder and the slave piston pushing the throw out inside the trans. Manually bleeding(pumping pedal)with cap off and filling reservoir is almost always needed, after vacuum bleeding with clutch slave bleeder open.
