As long as the entire wheel diameter is the same it would make no difference at all.

there used to be a calculator on a website that by entering the size of your old and new tires you could see how much your speedo was off..i'll go look for it.

As long as you use the proper tire sizes in your larger rims, you should be OK
205/16/50--GLX standard
215/17/45--17in VW Option
225/18/40--18in What I have now

As long as the overall diameter stays the same as stock an 18" tire won't affect the speedometer. Lots of guys switch to
larger diameter tires to fill the fenderwells better, but that makes the speedometer read slower in relation to the car's
actual speed.
Here's a useful tire calculator where you can enter a list of possible sizes then see how their overall diameters compare
and see how far off the speedometer will be. Paste all these sizes into the field and see how they're all really close:
195/65-15
205/55-16
225/50-16
225/45-17
225/40-18

Vw's 17" option wheels have 225/45 tires on them not 215/45....
