I found a set of 225/50/15 Yokohama Advan A032R for sale and they'd be just perfect for auto-x this summer. I have both a set of stock steel wheels and the 15' BBS mesh style rims that came on the 95 Jetta GLX.
Since stock is 205 , is 225 ok or getting too wide for the rim ???

Nope. Will fit fine.
However the 225/50 will be too tall for a A3 chassis, you may get some rubbing and a slight loss in acceleration. This is a good size for an A4 chassis.

Yeah, I'm running an A3 Jetta on sport springs and this summer I'm probabbly going to drop to race springs. Will it rub too much for just track use ? The runs are always less than 2 minutes .

2 min runs? what kind of auto-x are you doing? it doesn't really matter how long you'll be on the track, rubbing is rubbing. you could tear the fenderliner pretty much. you're best bet is just to try it out on roads and stuff. you may find that it does rub a little too much, so you would have definite problems on the track.

A friend of mine ran 225/50-15 Kumos on stock rims on his GTi. He ran into a problem of rubbing the rear spring perch (the tire being too tall) Depending on how low the perch is you may or may not have that problem.
Of course once the tire has rubbed off enough rubber to clear the perch the problem is solved. He did not have any fender rubbing problems with this setup.

i'm running the same wheels (mesh 95glx bbs's) and plan on going 205/50/15 toyo ra-1 racing tyre.
any other suggestions for rubber? i havent bought any yet.
