I took my car to a parking lot tonight and did some hard cornering in the wet to sorta get the feel. The main thing I noticed - my Golf tips to the side just about as much as my boat. What are the ways to fix this? Suspension? Springs? Sway bar?

H&R Race springs/ Bilstein Sports.... Front and Rear Swaybars.

springs WILL NOT control body roll. Swaybars do. Springs and shock will help to mitigate body roll, but only as a resistance force. Swaybars use opposite twisting forces to control body roll about the centerline axis.
Yes Yes Yes ...springs can be helpful, but more in a way to help the chassis "set" in a turn. By going to larger diameter swaybars, you effectively create a larger lever with hich to control body lean/roll dymanics.
If you want to keep the car from rolling over on it's keel, get bigger swaybars. If you want the suspension to be better controlled, get better shocks and springs.

My dad had a 21' Wellcraft too. Sold it due to NAFTA taking away all his clients
Those were the days.
I want to get a waverunner and paint the trailer to match the car with matching 17" long beaches. Now that would be a pimp.
