If you remove the cat, the car will be much louder, but unless you have a full exhaust, it should still be driveable, but louder. Keep in mind, that this is completely illegal and you can get fined very heavily. Doubtful that your car will pass inspection. But I guess it depends on where you live.
When I removed my cat, I did gain some performance in the mid-to-high rpm range. The engine just breathes better, but my new G60 has a cat, and I don't plan on removing it.
That sensor, is the O2 sensor. You absolutely need it. So if you take out the cat, you need to replace it with a "test pipe" that has a flange for that sensor.
You have two temp sensors, in the flange that sticks out from the head. One blue, One black. The blue is for the ECU, and the black is for the guage inside the car.
