Hello everyone,
How do I do it and where is the adjustment for the e-brake on my 2002.5 VW GTI 1.8T?

you need to remove the armrest and center console (see MKIV forum FAQ/DIY thread).
then from there you (drawing from memory here):
- put the gear in gear and chock the front tires and jack up the rear of the car & support on jack stands
- pull up on the handle 4-clicks
- tighten the adjusting nut on the cables and check wheels for tightness.
- release e-brake and check wheels that you can turn the wheel freely.
- Repeat as necessary
- Put everything back together
