when shifting hard into 3rd gear on a 1.8t, anyone else find it actually "grinding" a bit?

Try changing your tranny oil to synthetic oil. I've hear that that helps alot with the gear box.
I must do it sometime

Yes, and sport or "quick" shifting the 5-speed with brass syncro will gring REQUARDLESS what you do...
Be smooth in your shift motion to remove the grinding and self-destruction of your tranny.

Mine does sometimes. Like Erik said, its only when I shift hard. Everyone in the car is always like, "WTF was that?"

This is true. But you can quiet it a little bit by changing the transmission oil with Redline MT90
