It's a bear, isn't it? If you have the instructions for removing it, all I can recommend is care, patience, and a couple of tiny screwdrivers. The way the thing is designed, I was expecting to see an expensive "genuine VW cup holder removal tool" offered somewhere - after 20 minutes of picking at mine, I'd have paid anything.
All I can say is, you have to get the tool in the hole just right, then swing it out a bit to release - then immediately wedge that side so it doesn't pop back in while you do the other. Don't pull the first side out too far or the second will never release.
