I did all of the above on my car at 175k..started out as a t-belt replacement, then I realized how cheap the lifters and valve stem seals were, and so we did them along with a new cam. Car uses *zero* oil since and compression/leakdown #'s are near factory spec now.
It's very easy to drop a valve into the cylinder if you don't have it TDC, but with the right tool and cranking the engine carefully you can get it back without pulling the head. (Of course it's easier to just not drop it into the cylinder in the first place
)
One word of caution--make sure you get OEM German valve seals. I had to do the job *twice* in 2 days because the first set I got weren't OEM (I guess) and within 20 miles the car was smoking like crazy--4 of 8 didn't seat at all.
