Looking at the instructions for the Recaro N-Joy seats, which are aftermarket ones, but I’m sure yours are the same design, it states :-
Feel for the springs underneath the backrest cover with the thumbs (diagram shows these points are , looking from the front at the backrest, 70mm from the top edge of the backrest & are 180mm apart. Basically grasp the top corners of the Backrest & your thumbs will be almost in the correct position); these springs release the head restraint rods. Press both springs simultaneously. The head restraint can now be pulled away by a second person
If I had a scanner I’d show you the diagrams from the manual, but it should be self explanatory
