I wonder if running 91 octane gas on stock 2.0 would
hurt performance? Since the higher octane fuel burns
MORE slowly than lower octane fuel, as a result, those
running 91 in a car with low compression tend to produce
more carbon buildup in their intake manifold and valve chamber.
IS it true?

Running a higher octane fuel than is recommend for a stock motor is basically a waste of money unless you are detonating and then you have other issues

The engine is designed to run on 87 octane. To take advantage of higher octane fuel, you would need to add a performance chip to reconfigure the computer. Like they said above. Running high octane in a stock system is just waisting money.
