I don't know what normal operating temp is because my car is a) diesel, and b) doesn't have temp markings. But most cars sit about half way between the gauge, whatever temp that is.
It is possible to have the oil too cool, to the point that the excess moisture in the oil isn't getting burned off. You don't want condensation in your oil as it doesn't lubricate the engine very well.
