Looking for the correct part number for the Autometer A-Pillar Gauge Pod (Dual or Single) for 01 1.8T GTI w/ airbag? Thanks.

there is none technically. It only specifies for the non-curtain airbags model years.

So what pods have people been using to mount their A-pillar gauges? I've seen people with what looks like autometer pods (not 42 or newsouth), which pod is that?

there are pictures floating around demostrating that the A-pillar mount, showing that it does not interfere with the curtain airbags.
This is the route I'm going to take.

You can use the non-airbag pillar but it takes some custom work for it to fit properly. The airbag pillar is larger and slightly different shape then the non-airbag.

Dunno what you guys are smoking, but the only Autometer I could find was for like 1999+ or 2000+ (I forget) - but they are all the same. Mine fits better than a dude with no airbags I know. You just gotta get the right placement. That Draft42designs one? It's the same pod too just with OEM fabric overtop.

Nope - only that it's the only VW autometer pod for 1999+ cars.
Edit: A quick search found some links - for some reason they differ between golf and jetta:
