quick rear brake how-to needed...

Hi-
Silly question:
I've never changed the rear pads and rotors on a car with discs...
Do I unbolt the carrier that is attached with the hex nuts or the whole assembly that is attached with the allen-head bolts?
I was going to install my bearing races with a similar sized socket and a hammer. Bad idea?
Anything else I should know before I tackle this tomorrow (sunday) morning?
I should have asked some questions before I did the shocks and struts as well, I ended up removing the entire rear package tray carpet to get at the rear shock bolts... It seemed like the only logical solution.

I'm in somerville, I'll be working on the passat all day tomorrow.
If you're in the mood for a ride, you can stop by-- I'm always up for VW company!
...the manual would be a great help. I planed on getting the CD because it has the info for the B3 VR6, but the brakes absolutely need to be done ASAP.

I caved in and bought the 90-93 4cyl Bentley, even tho it doesn't cover my Passats motor....
