You can bypass the headunit if you want. My father has a similar setup in his 02 Denali, and he basically has two 7" Clarion screens in the headrests connected to a portable DVD player under the rear seat with wireless headphones. The rest of his stereo is stock. He even has an FM modulator so we can play the DVD through the car's speakers on a certain FM frequency. So to answer your question, you don't have to change the factory headunit if you don't want to.
