Upsolute takes out your stock chip, re-flashes it, and then puts it back into the ECU. If you take it to the dealer, your local Upsolute rep will have to 'flash' you back to stock mode. You can't do it yourself. If you wanted to do something yourself, you could buy a "spare" ECU, chip the "spare unit" and then you could swap entire ECU's before dealer visits...but to do this, you'll also need to buy a VAG-COM so you can reinitialize your immobilizer codes. This is kind of a pricey option.
There is a switchable program for upsolute chips (check out the forums on http://www.upsolute.com) but it's currently not available for the 2001's (AWW engine code). Maybe in the future? I hope so
edit: APR offers a chip that is switchable back to stock mode, although it's something like $900, compared to Upsolute at $350 (or something close) http://www.goapr.com
