I've heard through the grapevine people are running 102% boost and 2 degrees of timing.
Anyone have any experience with using the V-Tune?

Close to accurate. I've had good success with 104% boost and 0.75 timing advance. As soon as the FMIC goes on, however, the timing will change.
I also run the N75J valve, FWIW

I'm at +.75% timing 106.xx boost and 105.xx fuel load increase using autolite 3922 plugs (one heat range colder). my timing is being pulled very little with this setup.

How are you guys able to determine whether or not you are causing knocking. I do have a Vag-com, but have never tried to test for knocking yet.

You can determine knock using the VAG-COM looking at Block 020, I believe. People have been saying a value less than 5 is "acceptable" for timing knock.
