I thought they're supposed to have the following syllables in addition to the rhyming as you point out:

There are many types of limericks that are syllable specific for sure!!

I don't think first page directions mentioned any of that, these were to be fun and simple.

Just simple last word rhymes. There were some pretty good ones back in the day.

Absolutely! They're hilarious and fun! I was just trying to keep a flow with rhyme and rhythm. But, heck, even if it's just rhyming, I'm in! I had started a 5-7-5 haiku thread waaay back, but it kinda fizzled out.
