The car 01 1.8t Jetta.
This usually only happens while driving on the hwy. I'll be cruising along, then it feels like I'll have little to no throttle response for about 5 seconds. I'll press down on the gas but the car will not accelerate. After about 5 seconds of this the car will drive normal.
Any ideas?
Cel is on will get it scanned today.

It's a stab in the dark until you get the CEL scanned and you repost.
As for now, we can start taking bets on what could be

If it was my car here's what I would do.
I would go online, find the cheapest price, probably germanautoparts.com or mjmautohaus.com (best OEM replacement parts bar-none) and purchase both 02 sensors and a catalytic converter.

The P0420 is a Cat code possibly caused by a bad O2 sensor, and the other code being bank 1 system too rich can also be caused by a bad 02 sensor. Bad 02 sensors exponentially ruin the catalytic converter over time. http://****************.com/smile/emthup.gif

I forgot to mention. For the second code, it's possible for there to be a vacuum leak somewhere in your engine bay. Also, a bad MAF sensor could be the culprit. Do you have access to VAGCOM?

I could find someone from a local forum with vagcom. I'll do that asap to further look into this.

Good deal...You will be able to check both 02 sensors independently and the MAF
