...should I be using to paint my 16v valve cover and manifold. Do I need to be using some high temp stuff or what?

I don't think you need high temp. Just make sure you clean it real good and prime it first. Give it a good base to stick to. http://****************.com/smile/emthup.gif

you can prolly get something close. I've seen all sorts of different powder coats. The Ferrari Testarossa had a nice RED HEAD, thus the name.
