Look out for rust on the strut towers like on any rabbit. Be prepared to fabricate your own headliner, try to remember that you'll never be able to buy new rear fenders and that the factory grid grill is sweet. With any truck a bed in good shape is important so whether you find a nice one or or spend $$ having the bed fixed up you'll want to protect it someway( bed liners toneau covers ect.). It seems to me that diesels are way more common than gas but i love my gasser
try http://www.force5auto.com they have a really nice pickup for sale, it has alot oif potential and have a really cool front end mod, it should be a great starting point for a caddy project. The picture on the site is grainy but chris sent me some more photos and it looks decent.

parts can be scarce but if you find some 4 door rabbits or 4 door Jettas you'll be just fine. Rear end parts can be tough to track down, but they are out there.
Sagging leafsprings may be an issue if you need to haul loads, but you can get new ones made. I had a custom tonneau cover made from Checkmate ( http://www.checkerpro.com ) for just over $100.
When I put in the sunroof I picked up some headliner fabric from a local shop. I also got a new carpet kit from VW Restorations in Richmond, VA ( its a TMI product ).
My pickup was originally a diesel, so if you have big plans and come across a solid diesel don't let that stop you from getting it. The biggest thing is to find a cancer free pickup. I've replaced just about everything on my pickup over the past 3 years and finding parts was not as hard as I thought it was going to be.
good luck.

Been quite a few for sale on the VWPICKUPS mailing list. Lots of info and links off my page: http://4crawler.cruiserpages.com/VWpickup.shtml
I make add-a-leaf springs to boost the load carrying capacity of the rear springs, here's my truck with 1200 lbs. of milling machine in the back:
